I stumbled on this idea through Pinterest, then forgot about it, then was reminded by Rachel. I've been trying to go without refined carbs in the morning, which limits breakfasts to just about two things: eggs and smoothies. Both take a bit of time, particularly smoothies where you have to prep and wash the greens first. And smoothies have the added annoyance (for the lazy, like moi) of keeping fresh greens in the fridge and using them ASAP.

So, ever stating the obvious, the Internet says hey, why not blend up your greens in advance, freeze them, and toss them in smoothies later?

Duh. So I made up some cubes with lacinato kale, parsley, and a couple handfuls of spinach I had laying around. You could use whatever you want. This morning I blended it up tropics-style in the Vita-Mix with a banana, mango, ginger, and a splash of coconut water (btw, have you tried Harmless Harvest coconut water? Raw, with none of that weird aftertaste of the heated shelf-stable versions. Just like fresh!)

Usually I use a couple of cubes of ice, but skipped it today. Interestingly, it did blend up well but it came out with a sort of frozen custard consistency.

Not that I'm complaining. This way I can fool myself into thinking I'm having a milkshake for breakfast. Whee!

Have you ever tried this? What's your no-fail jet-fuel smoothie ingredient combo?

EDIT: By the way, the mason jar lid with the hole in the top and the BPA-free plastic straw are from Poppy & Pearl on Etsy. They're easy to DIY too, if you have a drill and the proper rubber grommets (Exhibit 2: too lazy.). Here's a tutorial!

Oh man, I want a vitamix so badly! This looks awesome. Question- do you add any liquid to the greens or is there enough moisture for them to stay a cube on their own?

@Pia: you do need a little liquid with the greens in the Vita-Mix, so I added a splash of coconut water. I imagine other blenders might require a little more, and of course you can use regular water if need be. (ps I <3 our Vita-Mix!)

That is a great idea! Especially since I had epic guilt recently for letting some spinach go bad in my fridge since I had no desire for green drinks. (I started drinking them in January of this year and love them!) But now I'm prego and feeling the need for more complex carbs in the AM. Ha!

I like unsweetened almond milk lately for non-green smoothies. Hmm, ginger is amazing, but you already have that. Cucumber is good for adding liquid. That's about it.

I make green smoothies every morning, though I've never frozen the greens in ice cubes before (good idea). I usually prep greens for the week on Sunday and keep them ready in the fridge. As to the thickness, I've found that kale tends to make my smoothies congeal a bit, but it always seems to be okay with a bit more water. The water seems to not only thin out the smoothie but also to counteract any congealing that's going on.

Frozen blueberries, fresh lime juice, some avocado, and silken tofu! It's such a simple, yummy combo, and the tofu gives you some good protein in the morning that isn't eggs.

Also, I know you're trying to avoid the refined carbs in the morning, but have you ever made quinoa for breakfast as a hot cereal? It's my favorite in the wintertime, and it's not nearly as refined as oatmeal or cream of wheat!

These beautiful photos make me want to get beyond my fear of freezing food. What kind of ice cube tray do you use? They are so 'cube'-y! I had never thought of this and am in a phase of tiredness about keeping my favorite greens fresh constantly.
