I've been easing myself back into regular yoga practice, and when class wraps up at dinner time, there's nothing that sounds better than a hearty, vegan, one-pan dish that happens to involve my former enemy, the brussels sprout:

Shredded Brussels Sprouts, Apples, and Tofu
Courtesy of the talented Heidi Swanson at 101 Cookbooks. I think this is also gluten-free or could be easily made gluten-free.
Looks tasty, and I've recently discovered brussels sprouts can be delicious. This recipe is going on my list!
Posted by: Diana at December 16, 2008 12:18 PMIf you get a gluten-free tofu, it's a totally gluten-free one pan meal!! If only the pants would eat brussels sprouts (I've loved them forever and my mom couldn't believe it. She STILL hates them...poor misguided mom...)
I should try this and trick him into eating it, especially since he just realized that he actually DOES like cabbage, he only thought he didn't.

I was a Brussels sprouts hater until I had them made with bacon and red pepper flakes at a wonderful restaurant here in Minneapolis. If you ever visit, go to Cafe Lurcat for great sprouts. They also have great roasted cauliflower (another one of those iffy vegetables).
